I always enjoy a good pumpkin recipe. I will no doubt try just about anything with pumpkin in it. When I first found a recipe for pumpkin energy bites I was a little skeptical. It called for protein powder and a few other questionable ingredients (most of which involved texture issues for me). The first time I made them based on the recipe I found. The second time I made them, I changed the recipe to suit me a little better and it worked well. These pumpkin energy bites are no-bake, they taste great, and if you put them in an airtight container, they last a good long while. I like these pumpkin energy bites because they’re convenient and filling. If I need a little snack, one or two satisfies me. I can take a couple with me if i’m going to be gone long or in the car for a little while.
Here’s what you’ll need for Pumpkin Energy Bites:
1 cup pumpkin puree
2 scoops Orgain Protein Powder (vanilla bean)
1 cup old fashioned oats
1 1/2 tsp. cinnamon
1/2 cup coconut flakes
1/2 cup dried cranberries, raisins or chopped dates
1/2 cup ground flaxseed
2 Tbsp brown sugar or honey (you may want to use a different sweetener)
1 tsp. vanilla extract or vanilla bean paste
1 1/2 tsp. pumpkin pie spice
1 Tbsp chia seeds
*You may also want to add pumpkin seeds, chopped nuts, etc.
Add ingredients together in large bowl. Mix well. Using spoon, scoop up enough of the mixture to make a ball about 1 1/2 in in diameter (or whatever you consider to be “bite-sized”). Roll into a ball and put on a cookie sheet lined with parchment paper. Refrigerate until chilled, store in an airtight container. My particular batch made about 18 energy bites. You can alter this recipes so many ways, add ingredients, use more or less of some, but I think it’s a great base recipe, especially for pumpkin lovers like me! Enjoy!
