Cilantro Lime Dip Recipe — Perfect for Summer!

 

Over the weekend I was craving a new dip for my veggies. I’m trying really hard to eat healthier and I always am in need of a new dip recipe to try. I found a recipe that was for cilantro lime dressing, but I changed it a little to make it thicker so I could dip my raw vegetables in it for a snack. Any recipe that I can use plain Greek yogurt in and have it taste good is a win for me. I like the idea of eating fresh vegetables from the garden and getting a little protein at the same time.

I was really happy with the final result. It was easy and I had everything I needed to make it already here at the house, including my giant crop of fresh cilantro that grew all by itself this spring. This easy cilantro lime dip has a wonderful fresh flavor and I think could maybe be changed even a little more to add some alternate ingredients if you wanted.

Cilantro Lime Dip
You’ll Need:
2 Tbsp green onions (or chives)
1/3 cup FRESH cilantro
1 large or 2 small cloves of garlic
2 Tbsp FRESH lime juice
1/2 cup light mayonnaise
3/4 cup plain Greek yogurt
salt and pepper to taste

Put green onions, cilantro, and garlic in the food processor. Add lime juice, mayonnaise and Greek yogurt and blend in the food processor until smooth and well-blended. Add salt and pepper to taste.

A few notes:
The original recipe which was for dressing called for 3/4 cup of light mayonnaise, 1 Tbsp of olive oil and 1/3 cup of milk added to the recipe above. I didn’t add those ingredients because I didn’t think the olive oil was necessary for dip and I was trying to keep the mixture pretty thick instead of thinning it out for dressing. I also REALLY like the flavor of lime, so I actually added a little lime zest in my dip. I wasn’t sure if most other people would like that, so I didn’t put that in the recipe I posted. I thought it was fantastic, but you may not agree.

I also thought a fresh avocado would be super yummy in this as well. I might try it next time and see how it is. Load up your favorite veggie tray and feel better about what you’re eating/snacking on. This dip is great with cucumbers and red and orange bell peppers as well as many other things I am sure!!!! Enjoy!!
